Don't get me wrong...I don't want to be ungrateful about losing weight....BUT on the other hand, I have not cooked one meal in over 3 months (insert cringe here). I was doing SO WELL on learning to cook right after the kitchen remodel. Then I started the eating well/counting calories...and darn it...I was too scared to cook. So I am going to suck it up. Research my meals, and just eat smaller portions and substitute ingredients! (All these recipes are from Cooking Light, Real Simple and Rachel Ray magazine) This weeks menu:
- Wheat Penne with Pumpkin Cream Sauce (hence the "substitute ingredients" ) Served with Roasted Asparagus
- Puttanesca Sauce Over Wheat Pasta (with Shrimp and Veggies on side)
- Turkey Tortilla Casserole
- Skillet Shrimp and Chicken
- Coconut Curry Chicken
- Mushroom Tamales
- Pumpkin Soup
